I wasn’t able to attend our Annual meeting and a board member wrote that they don’t take minutes and if I had any questions to contact our attorney as to why?
I was then told: Perhaps next year we can get a Co-operator to volunteer to take minutes unofficially.
This makes zero sense. Isn’t it the law?
I lived in my last co-op for over 20 years and the co-op attorney always took minutes.
Why would a shareholder do that? An annual meeting is where the board explains what they do with our home & money.

Doesn’t the Board have a Secretary who takes the minutes? I was the Secretary for 15 years and wrote the minutes for the Annual Meeting as well as the monthly Board meetings.
Even if the mgt company usually takes care of this, the Board should have its executive officers (President, VP, Secy, Treas). The Secretary is legally responsible for providing the minutes - and you have a legal right to see those minutes as a shareholder of the corporation.
I would contact the Secretary and request the minutes. Let them contact the mgt company on your behalf. Good luck.

Nowadays, the management company also takes notes on the board's behalf. You may want to check with the manager of your building.
Also is there a recording of the annual meeting that they can share?
